Walnut Beverage - Dairy-Free Milk Substitute

Overnight & 5 minutes

Prep Notes

Soak the walnuts overnight.

Place 2 cups of walnuts in a glass container and cover with up to 2 inches of water. 

The nuts can be soaked for up to 48 hours. 

On the day you make the recipe, drain and rinse the nuts before proceeding further.  Follow directions below.

Yields

5 eight ounce servings

Ingredients

2 cups raw walnuts

4 cups of water

Other ingredients to consider (totally optional):

organic maple syrup

local honey or raw stevia

organic raw cacao powder 

organic pitted dates

ground spices such as:  cinnamon, turmeric, cayenne, cardamon, nutmeg, cloves or other spices to taste

Directions

Pour, rinsed and drained walnuts into a blender or food processor (you need power for this step!)

Pour 4 cups of water of walnuts (We recommend filtered water is this best option preferably a reverse osmosis filtration system).

Blend on high for 2 minutes.

Strain the walnut liquid into a separate container by pouring it through cheesecloth (using it much like a bag, pull the ends together, twist and then squeeze the "bag" with your hand to extract all of the liquid possible.

At this stage, add a dash of salt and any of the optional ingredients from the list above and mix well.

Store in the refrigerator in an air-tight container.

Nut "Milks" are very perishable so be sure to consume with 2-3 days.
