Thai Style Pad Thai Brown Rice Noodles

Ingredients

8 oz (1 package) Organic Pad Thai Brown Rice Noodles

3 T peanut, coconut or olive oil

1 T Toasted Sesame oil

2 garlic cloves minced

2 eggs, lightly beaten (may be omitted for vegans)

2 1/2 T Tamari Sauce (gluten free)

2 1/2 T fresh lime juice (don't use bottled)

1 cup of bok choy, thinly sliced

1 medium red pepper (julienned) (may be omitted and substitute 1/2 cup more of bok choy or carrots)

1 medium carrot, julienned

4 green onion, sliced

2 T chopped fresh cilantro

1/3 cup chopped, unsalted peanuts (cashews or walnuts make a great substitute for those with peanut allergies)



Directions

Heat a pot of water to boiling.

While water heats, chop all of the vegetables, garlic, cilantro and nuts. Measure out the tamari & lime juice and set aside.  Beat the eggs, set aside.  Have the red pepper flakes handy.

Once the water begins to boil, cook noodles per package instructions minus 2 minutes so as not to fully cook them. They should be slightly firm when you drain the water off.  Toss noodles with all of the sesame seed oil.  Cover noodles and set aside.


While noodles are cooking:

Heat 1 Tablespoon of the oil in a skillet

Add the beaten eggs and cook completely.  Remove to cutting board and cut into bite sized pieces.


Add the remaining 2 Tablespoons of oil to skillet

Saute garlic, onions, red pepper, carrots & bok choy for approx. 2 minutes.

Add the cooked noodles, tamari and lime juice to the skillet and toss to combine.

Add the cooked egg pieces and toss to combine.


Divide among 4 bowls, sprinkle each serving with red pepper flakes, cilantro and nuts.

Notes

We have purposely left out the traditional fish sauce and brown sugar that the original recipe called for in order to keep it vegetarian and vegan friendly and budget conscious.  For non-vegetarians/vegans, you can enrich the flavor by modifying the sauce as follows:

Combine 2 T brown sugar, 1 tsp of fish sauce with the 2 1/2 T of tamari sauce and 2 1/2 T fresh lime juice.

Mix well and pour it over the combine vegetables and noodles all at once and toss to combine.
