2/3 cup Sugar (plain, all natural, granulated) or Spice & Tea Merchants Vanilla Bean Sugar, preferred
2 Tablespoons Dutch Cocoa Powder
3/4 tsp Vietnamese Cinnamon (Spice & Tea Merchants, preferred). Korintje Cinnamon (commonly sold in U.S. grocery stores) can be used.
1/4 tsp fresh grated nutmeg
Pinch ground ginger
Pinch ground cloves
Pinch salt
Place all ingredients in a medium bowl and whisk together.
Sift all ingredients at least once time (twice is even better).
Store in an air tight container.
To make a cup:
Mix 1 1/2 TBSP of the mix with 8 ounces of warmed milk or substitute non-dairy almond soy, or coconut beverage.
Top with whipped cream and a sprinkle of cinnamon or cinnamon sugar, if desired.
For a great Do-It-Yourself holiday or other special day gift, make a large batch of the dry mix and fill small mason jars decorated with fabric or ribbon. For an extra special touch, include a small wooden tablespoon.
