The effort for these waffles is well worth it.  Once you make them a few times, you will fly through the recipe.


Equipment Needed:  Electric Waffle Iron,  Hand Mixer. Whisk, 1 Large Bowl and 3 Small Bowls.

Special Maple Syrup Brand:  Runamok  Bourbon Barrel Aged or Cinnamon Vanilla Infused.  Purchase from Spice & Tea Merchants, Biltmore Park Town Square, Asheville, NC if you are local or call the store directly to order 828-552-8310.

Ingredients

1 3/4 cup flour

1T baking powder

1/2 tsp. salt

1 3/4 cup milk (2% preferred)

2 eggs

1/2 cup of vegetable or other neutral oil plus a little to brush the waffle iron

1/2 cup or more of fresh, not frozen, blueberries

Optional:  5 whole strawberries, sliced

2 bananas. sliced on the diagonal

1/2 pint heavy whipping cream

1/4-1/2 tsp. Madagascar Bourbon Pure Vanilla Extract

1 tsp. all-natural sugar such as "Florida Crystals" 

1 Bottle of Runamok Bourbon Barrel Aged Maple Syrup or Runamok Cinnamon-Vanilla Infused Maple Syrup (8.45 fluid oz.)


Directions

First, make the homemade whipped cream.  Don't be tempted to use store bought.

Pour 1/2 pint of heavy whipping cream into a small mixing bowl

Add 1/4-1/2 tsp. Madagascar Bourbon Pure Vanilla Extract and 1 tsp. all-natural sugar.   Using a hand mixer, whip the cream until to desired consistency.  Refrigerate the whipped cream until it is time to dollop on the hot waffles.

Second, rinse and dry the blueberries and slice the optional strawberries. Slice the bananas. Let it all sit at room temperature.  Put the Maple syrup in a small pot on the stovetop to warm it.  Don't let it boil.

Third, make the waffle batter.  

In a large bowl, whisk together the flour, baking powder and salt to combine.  

Separate egg yolks from egg whites using 2 separate small bowls.  Beat the egg whites, until soft peaks form and set aside. 

Whisk together egg yolks, vegetable oil and milk until combined. Pour all of the egg yolk mixture over the flour mixture.  Gently whisk to combine being certain to leave some lumps behind.  

Gently fold in whipped egg whites, leaving a few egg whites visible.

Fourth, Preheat a oven to 200 degrees. prepare the waffle iron per manufacture instructions. Brush both side of the iron with a little oil. Start cooking the waffles!  As each waffle is ready, place it on a sheet pan in the oven to keep it warm if you're not serving each one hot off the iron.

Fifth, plate the waffles:  Drizzle a small amount of hot syrup on the waffle.  Place 5 sliced bananas in a circle in the center of the waffle. Drizzle a little syrup.  If using strawberries, stagger 5 strawberries (or more if you love them) on top of the banana slices .  Drizzle a little syrup.  Scoop a dollop of whipped cream in the center of the waffle and top with a few blueberries.  Drizzle a little hot syrup and serve.
